The Aznárez brothers have been shepherds and sheep farmers in Burgui, at the entrance to the Roncal valley (Navarra). From the beginning of the constitution of the Roncal PDO - the first PDO for antiquity in Spain, established in 1980 -, they dedicated themselves to selling milk for the cheese that was made with PDO until, at the end of the 80s, they decided to set up their own cheese factory. At the beginning with milk from his own herd and nowadays with milk bought from lacha and rasa aragonesa breeds, as required by the PDO Regulation. In the context of the PDO they have become medium producers, but with limited production. A large cheese of raw sheep milk and 4 months of minimal maturation.
