  • The Aznárez brothers have been shepherds and sheep farmers in Burgui, at the entrance to the Roncal valley (Navarra). From the beginning of the constitution of the Roncal PDO - the first PDO for antiquity in Spain, established in 1980 -, they dedicated themselves to selling milk for the cheese that was made with PDO until, at the end of the 80s, they decided to set up their own cheese factory.
