Its tawny, golden color and sweet sherry aroma develops through its careful aging in oak barrels. Only a moderate amount of this vinegar is needed to provide a rich sherry flavor. It is surprisingly dry and complex, a dynamic alternative to the sweet Balsamics on the market.
