Idiazábal is a pressed cheese made from unpasteurized sheep’s milk, usually from the Latxa or Carranzana breed of sheep, in the Basque countryside of the Navarre region of Spain. A robust and sharp cheese, its 12-month ripening period imparts a slightly piquant taste. Its dry and crumbly texture, with a hint of smoke on the palate, adds a bit of woodsy flavor to the cheese.
