We only make the Bluebird Reserve twice each year: in the early Spring, when the grass is sweet and our cows are first out on pasture; and in the early Fall, when the crisp air and warm light prepare us for the winter ahead. Our mature Bluebird Reserve, with hints of butterscotch and rock candy, is a rich and buttery cheese.
We age the Bluebird Reserve for six months. Coupled with a more intense starter culture, the Reserve is strong and full-bodied, an expansion upon our original blue and a unique cheese in its own right. Its yellow-hued paste comes straight from the pasture our certified organic dairy herd graze; we don’t produce the cheese when our cows move onto hay. We hand-ladle the Bluebird Reserve to produce a creamy, full-flavored finish with a distinctive blue tang and signature sweetness.
