*SPECIAL ORDER* Grey Barn only makes Bluebird Reserve twice each year: in the early Spring, when the grass is sweet and their cows are first out on pasture; and in the early Fall, when the crisp air and warm light prepares for the winter ahead. The very mature Bluebird Reserve, with hints of butterscotch and rock candy, is a rich and buttery cheese aged for six months. Coupled with a more intense starter culture, the Reserve is strong and full-bodied, an expansion upon the farm's original blue and a unique cheese in its own right. Its yellow-hued paste comes straight from the pasture where the certified organic dairy herd grazes; the cheese is not produced when the cows move onto hay. It is hand ladled to produce a creamy, full-flavored finish with a distinctive blue tang and signature sweetness.
