Garrotxa is a beautiful cheese with an unusual name. Produced in Catalonia, Spain, the cheese has seen a sort of renaissance after its production became nearly extinct. Made with sharp, tangy goat’s milk, Garrotxa (slang for “bloomy rind” in the local dialect), has a very pale ivory interior, with a dense, yet supple paste scattered with tiny eyes throughout. Its creamy texture and pleasant taste are memorable, as is the natural molded grey rind. With a hint of nuttiness, citrus and the traditional tang of goat’s milk cheeses, Garrotxa is not to be missed!
