The “Sardinian Flower” or Fiore Sardo is produced by Sarda Formaggi on the Italian island of Sardinia. The cheese is produced using fresh, full-cream ewes’ milk, freshly pressed and brined for up to two days. The result is a floral treat, with a light, herbaceous flavor and slightly crumbly texture. As it ages, the cheese features salty caramel flavors with an apple fruit finish.
