Comté, a French inspired Gruyère cheese, hails from the Jura Mountains and is a staple in any French household for both cooking and snacking. Made from raw cow’s milk, Comté is aged between 10 and 12 months, ensuring an authentic, complex, sweet mountain flavor. Sometimes reminiscent of hazelnuts, nutmeg and caramel, the cheese is quite soft and chewy on the inside, becoming firmer as you reach the rind. These large wheels are rubbed with a brine solution during the aging process, resulting in slightly salty undertones and the formation of tiny eyes throughout the interior.
