  • Celebrated for its complex, savory tang, Cabrales (a protected cheese since 1981), can only be handmade in a few villages, including its namesake Cabrales. Made either purely with raw cow’s milk, or a blend of cow, goat and sheep’s milk, Cabrales obtains its rustic green-blue veining from the two-to-six month aging process that takes place in some of the world’s deepest natural caves, set in the Picos de Europa mountains. Cabrales is unique in that it is not injected with mold spores like other blue-veined cheeses, but rather cures from the outside-in. Each Cabrales wheel is placed on a wooden shelf within the cave and is periodically hand-turned and cleaned until the mold spores fully saturate the creamy, thick, slightly granular body, and a natural, sticky, yellow-brown rind covers the cheese. Finally it is wrapped in Los Caserinos foil that prominently displays the Cabrales DOP logo. The cheese holds a bounty of flavors, ranging from tangy to salty with a slightly piquant bite and invigorating aroma.
