Trugole is a beautiful cheese from the Asiago region in the Italian Alps. These special cows graze on the high mountain pastures, feasting on wild grasses and herbs which are ever-present in the milk that they produce for the cheese. Fruity, herbaceous and often rich, Trugole is handcrafted and washed in a salt water brine every day during the maturation process to preserve the soft texture and light eye formation. After aging for two months, Trugole is ready to enjoy.
