Asiago Fresco is the youngest version of the famous D.O.P. cheese from the Veneto region of Italy. Crafted from pasteurized whole milk and matured for only 20 to 40 days, this young cheese has a full, creamy flavor. Produced in the Po Valley near Treviso, Asiago Fresco is milder and sweeter than Asiago d’Allevo, with a springy, pale ivory interior. Classified as an Italian D.O.P. cheese, the production of Asiago is rigorously protected by the government. A delicious table cheese, Asiago melts very well, making it an excellent ingredient while cooking.
